Sisters Stir Up A Spicy, Sweet, Salty Salad
Sisters Lori Cardenas and Laura Cristobal-Andersland, of Aunty Lilikoi and Salty Wahine, respectively, made the trek from Kauai to share something very spectacular: their version of potato salad. These ladies have mastered their mustards so well, they win competitions with it. It was only appropriate that they threw some in this award-winning salad. For your next luau or office potluck, make this recipe and make some new friends. There is a new potato salad in town — and here it is.

WASABI MUSTARD POTATO SALAD
• 5 medium potatoes, chopped
• 1 teaspoon red Hawaiian alaea salt
• 1 clove garlic
• 4 large eggs, boiled, cooled and chopped
• 1 1/2 cups mayonnaise
• 1 tablespoon Salty Wahine Hawaiian Rub
• 5 sweet pickles, chopped
• 1 tablespoon Aunty Lilikoi Passion Fruit Wasabi Mustard (or your favorite Dijon)
• 1/4 cup chopped sweet onion
Put chopped potatoes, garlic and red alaea salt in pot. Add water to cover potatoes. Bring to boil and cook approximately 10 minutes or until potatoes are done. Don’t overcook.
Cool (preferably in a plastic bag overnight in refrigerator — this makes it firmer for mixing, plus you do not want to mix hot potatoes with mayonnaise).
Combine all ingredients, mix well, taking care not to smash potatoes.
Chill well before serving. May also add macaroni, if desired.
