Recreating A Like Like Fave
I don’t think people realize what it takes to put on a cooking show. You have guest coordination, prep, five-camera setup, lights, yada, yada, yada.
This week, our guest is the co-producer of this magnificent show and my hanai brother Frank Abraham. Three seasons ago, he asked me to contribute a recipe for his website CookingHawaiianstyle.com, and I replied, “Let’s make this a TV show.”
The rest is history. Frank’s website is one of the top 10 aggregators for recipes in the country, so it makes sense to share one of his many dishes!
His teacher Mr. Yoshino at Roosevelt High School introduced Frank to the classic kamaboko omelette at Like Like Drive Inn.
This is Frank’s version with an added dipping sauce.
KAMABOKO OMELETTE WITH DIPPING SAUCE
• 3-4 eggs
• 1/2 cup kamaboko, cut into strips
• 1/8 cup sliced green onions
• 2 slices American cheese
• salt and pepper, to taste
In a bowl, scramble eggs. Heat small frying pan and melt butter; add kamaboko strips and green onions and cook for 30 seconds to 1 minute.
Pour scrambled eggs over mixture.
Cook on medium-low heat.
Once eggs are three-quarters cooked, add American cheese to middle and plate with rice.
Garnish with sauce, chopped kamaboko and green onion.
For Sauce:
• 2 tablespoons butter
• dash shoyu
• 1 teaspoon oyster sauce
Make sauce ahead by melting butter, adding shoyu and oyster sauce.
Mix well and set aside.
