Yes, Music Lovers, Henry Can Cook Too

We were honored to have Island music royalty in our kitchen this week.

I have known Henry Kapono for about 10 years now, but like everyone who knows music, I have known him since high school … kinda. I mean, I have been singing C&K songs for as long as I can remember. Henry is a great Hawaiian music icon, and here he shares with us one of his favorite dishes, lomi opae. Back in the day, opae (shrimp) was plentiful in our ahupuaa streams, and this is one of those dishes that needs to be passed on to our keiki.

Enjoy this simple dish from Henry Kapono.

LOMI OPAE

* 2-3 ripe tomatoes
* 1/3 sweet Maui onion
* 1 cup dried opae (shrimp)
* Hawaiian salt, to taste
* 4 tablespoons rice wine vinegar
* 1 piece ginger, grated
* green onions, chopped
* 1 Hawaiian chili pepper, minced

Cut tomatoes and onions into bite-sized cubes. Mix all ingredients and massage mixture.

Serve chilled.
