“Montreal bagels are sweeter, smaller and denser than their New York cousins (for a) lot of different reasons: bulk fermentation, honey boil, etc.,” he asserts, adding that Empty Elle is the only Mon- treal bagel shop on the island.

    “The dough bulk-ferments overnight, then it’s hand- rolled into bagel form, then boiled in honey water, then baked,” Veling reveals.
