 Eggs are delicious and nutritious. They are often referred to as one of the most complete foods on the planet if eaten whole because they contain almost every essential nutrient.
Ingredients:
• 1 whole egg or 2 egg whites
• 1 slice of whole-grain
bread
• 1/2 ripe avocado
• 1 tablespoon Poet’s
Directions:
Cook the egg to your lik- ing. Poet loves egg whites cooked flat like an omelet.
Toast the bread. Then, spread 1 tablespoon of Poet’s Presto Pesto on bread (optional).
Mash your avocado right in the skin and season with a dash of Hawaiian salt and lemon pepper.
Presto Pesto (optional)
• dash of Hawaiian salt
• dash of lemon pepper • 1 pinch of microgreens • 1 tablespoon shredded
Parmesan cheese
• Spread mashed avo- cado on top of pesto, and then lay cooked egg on top. Finally, pile on the micro- green and fresh grated Parmesan cheese.

Our avocado toast can be modified to
meet your fancy by adding your favorite
seasoning, sliced heirloom tomatoes or a balsamic vinegar glaze. We, however, decided to keep the recipe simple and pack it with powerful nutrients to keep you and your keiki satiated all morning. We start with our favorite Dave’s Killer Bread, which has loads of organic whole grains and seeds for added texture. We then spread our Poet’s Presto Pesto (find it in the Eat Pono cookbook) made from homegrown basil flush with antioxidants, vitamin K and calcium. That’s followed by a smear of avocado that pro- vides healthy fats and fiber. And lastly, we top it with the egg and microgreens, the latter of which carries more nutrients than their full-sized counterparts and are loaded with vitamins and minerals.
What kid doesn’t like a mini version of their otherwise boring salad greens? Give it a try. This breakfast is sure to please.
