FRESH SALMON WITH CRAB AND MUSHROOMS
Ingredients:
• 1 slab fresh salmon, boneless
and skinless
• 8 ounces packaged Okuhara
Foods brand imitation crab
• 7 whole dried shiitake
mushrooms
• 1 stalk fresh celery
• 1 tablespoon round onion
• 1/2-1 cup mayonnaise (Best
Foods brand)
• garlic salt, to taste
Directions:
Cut imitation crab into 1-inch piec- es, flaked. Soak shiitake mushrooms in water for about 15 minutes, then julienne cut. Finely chop celery and onion. Mix all ingredients together well with mayonnaise (to consistency when making tuna salad).
Sprinkle both sides of salmon with garlic salt. Spread previous mixture over salmon. Bake in an uncovered pan at 400 degrees until topping is nicely browned, 25-45 minutes, depending on size of the salmon.
