Ingredients:
• 1/2 large ‘ulu (steamed, skinned, mashed)
• 2 large gem pota- toes (peeled, chopped, boiled, mashed)
• 1/2 large sweet onion (chopped)
• 5 cloves garlic (minced)
• 1 pound imu kālua pig (chopped)
• Hawaiian salt, to taste
• pepper, to taste
• olive oil, for frying • 1/2 stick butter
• 1/2 cup flour
Directions:
Chop sweet onion, mince garlic, chop kālua pig. Combine precooked ‘ulu, precooked potatoes, onions, garlic, kālua pig, butter, salt and pepper in a large mixing bowl.
Form mixture into palm-sized patties. Dust with flour for added crisp. Heat pan with oil. Pan-fry patties in olive oil until crispy on each side, and set on wire rack or paper towel to drain oil.
Serve fresh with eggs and rice.
Cooking time: 20-30 minutes. Serves 8-12.
