OServing Up Authentic Thai Dining
probably eat out at a different restaurant three times a day for a year and not even get through half of the restaurants in the Valley. From celebrity chefs to local restaurateurs, the food options are endless. One local chef, Dan Cough- lin, went from growing up in his mother’s Thai restaurant in Milwaukee to owning not one, but three popular restau- rants on the Ninth Island.
Dan started with LE Thai, located on East Fremont Street. This extremely pop- ular restaurant is known for its lunch specials and Thai dishes that Dan learned from his mother and grandmother. While The Fremont East District is currently a popu- lar, walkable area back when Coughlin decided to open LE Thai, this was an area that both locals and visitors avoided like the plague. He believed the area would continue to grow and develop, which was at the time a gamble, but a bet that he certainly won. Cough- lin opened his second restau- rant, LE Thai 2, which has become popular with locals in the community, followed by 8 East inside of Circa Re- sort and Casino. The eatery is a collaboration of Pan-Asian dishes between Dan and 8 East’s executive chef Steve Piamchuntar, who also grew up working in his family’s Thai restaurant in California.
