A Restaurateur’s Local-style Thai Dish
I met Maile Symmonds almost 20 years ago in her family’s restaurant Paesano. She has been around a kitchen her whole life and has restaurant running through her veins. Owner of Maile’s Thai Bistro in Hawaii Kai, her specialties are Thai and Italian food. When she visited, I asked her to localize a dish for us, and she came through with her amazing Pad Ki Mao with Char Siu Pork. Enjoy!
PAD KI MAO WITH CHAR SIU PORK
* 1 tablespoon cooking oil
* 1 egg
* 1/2 cup broccoli
* 1/2 cup char siu pork
* 1 cup chow fun noodles
* 1/2 tablespoon fish sauce
* 1/2 tablespoon sugar
* 1/2 cup oyster sauce
* 1 teaspoon vinegar
* 1 teaspoon black soy sauce
* 1 tablespoon garlic chili oil
* 1/2 cup bean sprouts
* 1/2 cup Thai basil
Start with a hot wok, add oil, crack an egg and stir it up. Add sliced char siu, broccoli and chow fun noodles. Add fish sauce, oyster sauce, black soy sauce and vinegar. Then add sugar (be careful not to burn the sugar) and the special ingredient, garlic chili oil.
Add in bean sprouts and Thai basil and give it a quick toss.
