Bringing Brother Adam Into The Kitchen

This week, my younger brother, chef Adam Tabura, stops by the Ferguson kitchen.

Winner of the Great Food Truck Race on the Food Network and chef to many A-listers, this guy is pure talent. Growing up on the tiny island of Lanai with no fast-food restaurants, and being poor, he had to be creative. He is one of those guys who can find anything in the fridge and create the ultimate meal.

Chef Adam prepares the fish for his Red Snapper Egg Foo Young

With diving as one of his favorite hobbies, Chef Adam showed us how to cook one of his favorite fish, Red Snapper Egg Foo Young.

Pair it with the 2012 Hapa Blanc from Kaena Wines and you can’t go wrong!

Growing up poor on the island of Lanai, Chef Adam learned to be creative in the kitchen

CHEF ADAM AND LANAI’S RED SNAPPER EGG FOO YOUNG

* 4 fresh eggs, scrambled
* ginger, slivered
* tomatoes, diced
* bean sprouts
* carrots, slivered
* bell peppers, slivered
* tofu, cubed
* green onions, sliced
* 1-2 ounces opakapaka, thinly sliced

Heat pan with a little bit of oil.

Saute your favorite vegetables/ingredients in hot pan. Be sure not to overcook.

Add fish and toss until cooked.

Scramble eggs in a bowl. Add scrambled eggs to pan with fish and vegetables.

Garnish with chopped fried onions and green onions (optional).

Finish with sauce.

For Sauce:

* 1 teaspoon hoisin sauce
* 2 tablespoons oyster sauce
* 1/2 teaspoon sesame oil
* 1 teaspoon honey

Mix all ingredients in a bowl until honey is dissolved and all ingredients are combined well.

Set aside and use as a garnish to top the egg foo young.
