A Band Of Brothers Hits The Kitchen

I have known Makani Tabura and Chef Adam Tabura my whole life — in fact, I know them so well I used to feed and bathe them when they were small. Makani, my brother right below me (same mother, same father), is a talented radio DJ, emcee and dancer in the hula world. Chef Adam, the third of us four boys, is the talented culinary master. Growing up poor on the tiny island of Lanai and with no fast food, we really had to be creative in the kitchen — and it became something we love to do.

I was happy to get my brothers Makani and Adam with me at the same time because our schedules are so hectic. When they joined us in the kitchen, we had a blast making venison chili, crispy moi and a haupia bread pudding.

COCONUT BREAD PUDDING WITH WHITE CHOCOLATE SAUCE

• 1 pound sweet bread or day-old croissants
• 1 12-ounce can Thai coconut milk
• 1 quart heavy cream
• 6 whole eggs
• 1 tablespoon ground cinnamon
• 1 cup cranberries or raisins (optional)

Place coconut milk, heavy cream, eggs and cinnamon in a mixing bowl and mix well (custard mixture). Pull bread into small pieces, then place into a baking pan or individual baking molds. Pour custard mixture into bread and soak bread well, leaving no dry areas. Place pan or individual molds into a shallow water bath and bake at 325 degrees for 30-35 minutes. Check doneness by sticking a toothpick into pudding; it should not stick to toothpick. Do not overcook.

Spread white chocolate sauce over bread pudding and dust with powdered sugar. I like to drizzle some lehua honey to finish.

For White Chocolate Sauce:

• 3 cups white chocolate
• 1 tablespoon unsalted butter
• 2 tablespoons heavy cream
cognac or brandy (optional)

Place heavy cream (and liquor) in a mixing bowl over a double boiler. While slowly heating up cream, add the white chocolate and stir to melt.

Once chocolate is completely melted, stir in cold butter then remove from heat.
