Augie’s Corne Beef & Cabbage
Augie Tulba has been part of Hawaii’s landscape of entertainers the past 20 years. Opening for comedians such as Damon Wayons and Howie Mandel, he is one of Hawaii’s funniest. I was introduced to Augie by Andy Bumatai at a fashion show I was hosting. I remember Andy saying, “Hey, I got this new comedian from Kalihi, can you can give him five minutes?”
That was about 20 years ago, and we have been friends ever since.
When he’s not making people laugh or working in front of the camera, Augie enjoys cooking.
He joined us on Cooking Hawaiian Style to film the show’s pilot, making one of his favorites: corned beef and cabbage.
If you are from Hawaii, this is one of those classics that you just have to have every once in a while.
Augie T’s Corned Beef & Cabbage
Ingredients:
• 1 can corned beef
• 1 head of cabbage, chopped
• 1 tablespoon oyster sauce
• 1 tablespoon Aloha shoyu (soy sauce)
• Salt and pepper to taste
Method:
Heat pan and add corned beef. Once the fat in the corned beef starts to melt, use your cooking spoon to break up the corned beef. Add a tablespoon of oil if your corned beef is dry.
Chop cabbage and add to the corned beef. Stir and cook for about 10 minutes. Sometimes adding a tablespoon of water helps create more steam, allowing the cabbage to cook faster.
Season with salt, pepper, shoyu and oyster sauce. Cook for a few more minutes until the cabbage is cooked, but still has a little bit of crunch.
