A Punahou graduate and busy mother of two, Dr. Jennifer Loh finds time to sit on the American Diabetes Association (ADA) board of directors and run the Endocrinology Department at Kaiser Permanente. How does she squeeze exercise and healthy eating into her day? She replies, “By getting up early!”

Jennifer specializes in endocrinology, and her true passion is helping diabetics find motivation to improve their lives and get healthy by making healthier options and food choices more accessible for everyone here in Hawaii. Becoming involved with ADA gave her a platform to continue to advocate for research, education and community outreach for her patients and the Islands’ diabetic community, which numbers more than 497,000 people with diabetes or pre-diabetes!

ADA, Kaiser Permanente and Zippy’s Restaurants have partnered to provide Hawaii with a menu focused on nutritious ingredients, healthy preparation and portion control. Popular dishes such as teri beef, salmon and even a meat-and-eggs breakfast have been altered to add veggies while cutting carbohydrates and fat, so diabetes patients can manage their symptoms without giving up their favorite foods. Zippy’s chefs are sharing a simple broiled salmon recipe now available in restaurants through Oct. 31. Served with a side salad and scoop of brown rice, this perfectly portioned dish is light, healthy and most importantly, delicious.

BROILED SALMON WITH A SCOOP OF BROWN RICE AND STEAMED BROCCOLI

*1 4-ounce salmon fillet
* salt
* pepper
* 5 ounces (1 scoop) brown rice
* 1 1/2 ounces steamed broccoli

Wash salmon and pat dry. Season with salt and pepper, to taste. Broil just until fish flakes. Make brown rice in rice cooker (this recipe is only for one portion, so make sufficient rice for four scoops). Season broccoli with salt and pepper and steam until fork tender.

To plate, place a salmon filet on each plate, add rice and broccoli. This makes one portion and may be doubled for two portions or quadrupled for four portions.
